A recent Globe Magazine article (Growing Up Gourmet) really makes me want to visit West View Farm in Dorset, VT. The inn and the town sound lovely, and the menu sounds amazing. Plus, I can't wait to meet the innkeepers' kid, 3 ½- year-old Ray Chen, a German-Chinese foodie in the making! Too cute.
Also from the Globe: an interview with Dann Paquette, brewmaster of the Tap Brewpub in Haverhill, MA. (Related: Belgian Beer Fest in Boston, this Saturday Nov. 6th)
Finally, from Alton Brown's Say Cheese! episode of Good Eats: a tasty-sounding recipe for Fromage Fort (yep, Strong Cheese). I have yet to try making it, but I'm intrigued.
Posted by rv at November 4, 2004 05:20 PM to fooddude, the fromage fort he does on that show is really cool. and looked soo freakin' yummy. AND, I'm trying out the parmesan baked thingies this weekend. shred, sprinkle in a circle, bake and then let set on glass or anything to make parmesan cheese bowl thingies...
Posted by: CF at November 4, 2004 06:35 PMI have a big block o' parm in Donna's fridge waiting for me to make those crispy things, too. :-)
Also, I tried mixing AB's hard-cider-based fondue recipe with another fondue recipe that uses nicer (IMO) cheeses. Not too shabby.
Tell me how the Fromage Fort comes out!
Posted by: Bob Gilmore at November 5, 2004 12:02 AMI had no idea that you were both Alton Brown fans! We love him (yay, TiVo season pass!) and I'm always eager to watch his new episodes. For Hallowe'en, Sean made the Acid Jellies from the recent Tricks for Treats show. They were interesting-- not really like a candy, more like Jell-O Jigglers. Maybe we didn't let them dry out enough. At any rate, we came up with the following modifications to the recipe:
1) substitute tequila for the 1/2 cup of water that you combine with the gelatin and citrus juice in the first step of the recipe
2) after cutting the jellies into cubes, toss them in salt instead of sugar
Voila! Margarita shooters that you can eat with your fingers! (No, we haven't tried this yet.)
